From June 14 to 16, Zamora will become the epicenter of the baking industry with the First International Bread and Flour Congress. The event, with a budget of over 120,000 euros, will feature experts from several countries. It aims to boost the local economy and generate employment, in addition to anticipating the PanFest of 2027, a long-term project for the city.
Technology that transforms grain into business 🥖
The congress will address innovation in milling and baking. Techniques of controlled fermentation, use of alternative flours such as teff or sorghum, and digital traceability systems to guarantee the quality of local wheat will be presented. The automation of ovens and the reduction of food waste through artificial intelligence tools applied to production will also be debated. Zamora seeks to position itself as a technical benchmark in the sector.
Our daily bread, now with European funding 💶
With that budget, it looks more like the wedding of the Agriculture councilor's daughter than a congress. That said, for 120,000 euros we hope they at least give a loaf of artisan bread to each attendee, and not those supermarket ones that last longer than plastic. If this gets people to buy again at the neighborhood bakery, it will have been worth it. If not, we'll always have PanFest to see how the money is toasted.
